I trust you all had yummylicious new year celebrations and lazy holiday days with friends and family ! tell me, how much did you indulge into festive feast and beverage..no no don't tell me you didn't ...;-) I know you all did ..and why not? I agree with you too...life is fun, why do you worry about it too much? as long as you can have everything in moderation it's fine...

with.... because even we spoilt ourselves in this festive season ..so I thought we do need to detox our body...and thought of a having soup for our lunch..i was thinking which soup shall i make and bingo my daughter came up with one of the superstore magazine , saw recipe and loved it luckily I had all the ingredients in the house... The soup was very delicious satisfying and was very easy to whizz up.
You will need :-
Heat the oil in a saucepan and fry the onion until soft. add curry paste and stir now add other vegetables , stock and coconut milk. Simmer for at least 20 minutes ( I put mine into pressure cooker at this stage , after 3 whistle switch of the heat ) or vegetables are tender. Cool for a while then puree the soup . Stir in half the coriander and sprikle the rest on top. Serve with your choice of bread or bread sticks.

- 2-3 tbsp Red Thai curry paste
- 1 medium sweet potato peeled and diced
- 100 g carrots diced
- 500 g butternut squash cubed
- 300 ml vegetable stock
- 400 ml light coconut milk
- 4 tbsp chopped fresh coriander
