You all know how much of a huge fan I am of Spinach, I don't leave any opportunity to cook with any type of spinach, spinach is like my family member. I have to buy it whenever I go for my groccery shopping, if it's possible fresh and I always keep one packet frozen too...and spinach is perishable, you have to use very quickly...so, many times my innovative ideas come useful....Past few years I been making this daal....
Spinach and bengal gram daal -mix them together and you get fragrant daal (Soup) which contains Protein, Iron, Vitamins A and calcium....also LOW GI food for you !
You will need:-
- 1/2 cup Bengal Gram Daal(chana Daal)-Boiled
- 1 small bag of spinach(you can use palak)
- 2 tsp paste of green chillies, Ginger and Garlic
- 1/2 tsp kasoori methi (dry fenugreek leaves)
- 1 small Onion finely chopped
- 1/2 tsp Cumin seeds
- Pinch Asafoetida
- 1/2 tsp Garam masala
- 1/4 tsp red chilli powder
- 1 tbsp olive oil
- 1 tsp cumin and coriander seeds powder
- Salt to taste
In a microwave cook spinach with very little water about 2-3 minutes. Grind in a grinder coarsely, not like a paste...In a heavy bottom pan heat the oil, add cumin seeds, asafoetida and kasoori methi. When it splutters add onion, fry for few minutes, now add GC ans GG paste and cook for few seconds..Then add all the masala powder and cook, add spinach mix very well, add little water (I used my paneer whey) and cook for 4-5 minutes. Now add boiled daal and cook on a low heat 4-5 minutes. Ready to serve..
Perfect with Basmati Rice and Roti or Naan...Enjoy as much as we did !!

I love this dal! Going to try it this week, as I have planned to make green leafy vegetables every night for my kids.
