While we were holidaying in Italy 3 years ago, we came a cross this particular flavoured facaccia bread . When we landed in Milan it was lunch time, kids were grumpy and our tour manager strictly forbid having any snack in the coach...He guided us to this particular cafe where queues were huge..waited for so long and in the end we just chose few slices of facaccia bread, ice creams and coffee...No, this time I couln't ask the waiter....he didn't understood English and I didn't Italian.....Since then in our whole Italy tour we were just looking for this type of bread...It was available in Rome, Florance, Venice,Pisa,Capri everywhere,we loved the Italy weather,water taxi ride to venice and gandola ride in romantic city Venice.. and we were thinking of the song from the film'The Great Gambler'...DO LAFZON KI HAI DIL KI KAHANI ..I'm not putting our own video but putting original film song from you tube........so how did I unfold this recipe? ya you guessed right just googled it and since then making it...always a great hit with the family..been making it slightly cheat's way with bought pizza base mix.....can't blame me can you?
You will need:-
2x150 g packets of Pizza base mix
2 tsp active dried yeast
1 tsp sugar
1 tbsp olive oil
25 g pitted olives, sliced
25 g sundried tomatoes, sliced(used jar ones)
Sea salt
Handful of freash chopped rosemary and thyme
225 ml warm water
Method:-
In a bowl combine the warm water, yeast and sugar and leave for about 15 minutes untill frothy. Oil a shallow baking tin. Put the pizza base mix into the food processor bowl fitted with the dough attachment. With the machine running, pour the frothy yeast mixture and mix to a soft dough. Knead for 2-3 minutes in the machine untill smooth in texture. Press into the prepared baking tin, pushing the dough into the corners. Cover with oiled clingfilm and leave rise in a warm placed about 35-40 minutes or untill in height. Meanwhile preheat the oven to Gas mark 7. Make dimples all over the surface of the risen dough with your finger and sprinkle sea salt, olives, tomatoes and chopped herbs.Bake for 10-15 minutes untill golden.
Focaccia bread can be used as a side for many meals, as a base for pizza or as sandwich bread.
I love Focaccia and after looking at your pic I feel like having it... and yes, the song " do lafzon ki hai" is one of fav... Italy is beautiful and has its own charm:)

Man I love this shortcut version. I too loved the focassia bread while I was touring in Italy last year. Thanks for sharing this short cut version.Certainly saves time from doing it from scratch!
Finally I landed here at this comment box from that short but yummilicious Italian trip..... I loved what I read..... That song is my favorite... Few years back, when my parents visited, that is what they remembered when they were there..too..... Looks like all Indians surely thinks of it, there..... FOREVER IN OUR MEMORIES!!!!!! Loved that delicacy from that place... too.... Prepared well....
